As promised.
Whenever we are in a rush ----- the fact to our family is, almost every weekday, but still, kids need to seat down to eat "real" food. And us as well. These are all quick fix I did recently, except the roasted pot dishes, most of them cooked & Served within 15 minutes. Half of them need less than 5 minutes. They have no items my peaky eaters criticize, so no fancy no pro no show piece at all. I can come N Serve them according to everyone's schedule, while pair a wine to relax myself for a whole long day.
小朋友一天天长大,挑战我的所有日程! 周一到周五,从早餐午餐盒到晚餐,往往各有所需----上下课时间不同,课后活动不同,一餐饭,少说做两批,个别还要分上三四次菜。挑战我的神力。 所以近期无脑的菜就源源不绝的推出,我的最佳记录是有一个月时间每周3天25分钟新鲜现做并保证时间让老大吃完晚餐以赶下一场。当然,不重样。
这些当然是快速就不够精致的家常菜。看见他们,就纪念我大条神经也会燃烧的时分吧。
Rib Eye W/Stir Fry Green top on Steamed Rice牛排配生菜韭菜豆芽。
Pan Grilled Parmesan Chicken Steak w/Green Bean 香酥煎鸡排伴四季豆。
New Zealand Lamb Fillet with Baby Portabella Mushrooms & Lettuce 蘑菇孜然羊肉伴生菜
Pan-Seared Chicken Tender w/Chinese Cabbage 煎鸡排配大白菜
Beef Teriyaki W/Roman Lettuce 照烧牛排粒和生菜
Chicken Broccoli & Lettuce 芥兰花鸡胸配生菜
Slow Cooker Roasted Chicken w/Mixed Veg 烧鸡配时蔬。腌过夜煎好后用的是慢烧锅,放如蔬菜烧三两分钟就好啦。
Shrimp Stir Fry w/Egg, Winter Melon top on Rice. 滑蛋虾仁配烧冬瓜
Italian Apple & Cheese Sausage, Home-Baked Fry, Mixed Veg. 烤意大利肉肠配烤新鲜薯条生菜。难得用 proceed meat. 逗小孩开心:这是脆的薯条。
W/Baked Potato, soft version. 这是软的薯条。烤的薯条我喜欢软的。
Roasted Beef Tendon w/Spinach & Rice. 烧牛筋配菠菜
Stir Fry Beef Ball & Fish Tofu w/Bean Sprout, Veg, top on Rice. 肉丸鱼丸配炒豆芽青菜
New York Strip, Mashed Sweet Potato, Salad. 当然,好吃又快又 festive, 就是牛排啦。不过吃起来时间就长喽~~~~
My trick to cook fast: Manage multi-tasks wisely. Different method at same time as possible: quick BBQ, Sautéed, Stir-Fry mean dish, while salad or steam the side. Rice cooker on timer, or invest on the best slow cooker can afford. Beef, egg, shrimp can be cooked very quick, lettuce, bean sprout & corn require least wish & cooking time. Broccoli can be steamed first in Microwave, beans can be boiled one day ahead.
懒人就不要笨。想着本要1小时的饭我十来分钟就好,就象赚到了。不过这脑筋是太伤了呐,还是在修炼?
Beef Teriyaki is always very fast and beloved by our meat eaters. 我们家的肉食动物们只要上rib eye, 就欢天喜地的。
Egg is good protein, no marinate in need, no brain to cook :) Plus we have two very Eggy Fav boys all the time. 没有比鸡蛋更无脑更简单更补充蛋白质了。只要没合适的肉或只有三两分钟来上菜,我就磕鸡蛋。早餐不消说,当然好过香肠培更,午餐三明治也可以铺片cheese 生菜来夹,晚餐加肉加虾也快。鸡蛋和牛奶一定要买最贵最好的(其实也贵不到哪里),用来安心。
Boiled for very short time, Ziploc w/soy sauce, mirin, sugar in fridge over night. Anytime side or BF or snack. 这种懒汉的小儿科就不要多献宝啦。
Corn, Pine Corn & Turkey. Healthy, hearty, and naturally sweet dish. 松子玉米火鸡粒。老小都爱,称饭称面独食都可。
Fry Rice. I used to consider kiddos love fry rice have not much fancy eating experience. Now mines are totally in fav (and me either), and I totally agree that even a fry rice could be hard enough to test any chef... 这个....就是哄着把剩饭消掉的方法。可是手炒到很酸哈.......
Miso Soup. Cannot be any simpler nor delicious. 大酱汤。到日本店买了最fancy昂贵的海带芽,烧出来是酱子的。Hmmmmm...
Pasta could be quick & healthy, if add enough veg and reduce enough sauce/butter. Olive oil w/fresh garlic works great! 这也是午餐晚餐皆可的一个选择。
Beef Tendon, Pork Meat & Sautéed Tofu Sauce, Ox-Tail, Sweet Pork Ribs. Pot dish can be prepared night before, and very re-heat friendly. And sauce----lots of them on top of steamed rice, my kiddos just love that part.烧的菜就得头一天着手。最不济也得一早烧,铸铁锅保温倒是好,放大半天也等于烧多一个钟了。配什么都是摆摆盘的事情了。
For yummy and healthy and quick veg salad, as vary sauces as possible. But in a hurry, best salt + olive oil is my top choice. Depends on season & variety, I sometimes replace w/Sesame oil, or add Oyster Sauce/Sesame, Fish Flecks on top. 挑少摘易洗快熟的时蔬,配极简的调味就好。其实所有的家常或顶级,应季新鲜的食材,才是最重要的权衡。
