Almond Lace Cookie 杏仁蕾丝饼干

Finally I'm getting better. For years have not been so sick so long.
Need to use my expensive Almond Meal Flour before getting expired. Macaroons are too labor intensive for me at this time, so trying Almond Lace first time after my petite sized Memorial Day BBQ.
Such a simple recipe, but SOOOOO unexpected challenge.


生一场病,是很伤元气的事情。回归厨房,就从baking开始。
一如既往的香遍全屋子,可真是选错了方子:杏仁蕾丝饼干。这是材料简单,却很"烤"手艺和需要练习的饼。太好吃 (老二逢人就夸“好吃死了”,老大吃得话都懒得讲),太美,太麻烦。
我发现只要用上杏仁粉的点心,就是一场考试。

Brown part is extra crunchy. Re-baked some to make whole browned. Not that good looking, but most popular...

Relaxed am with all goodies. Even some fruits from my own yard... 


Lessons learned:
1. Use COLD pan every time with soft but not melted butter
2. Or silicon mat w/o butter
3. 6 pc each time maximum
4. One pan in center of oven, each time
5. Remove cookies to cool down 10-15 seconds after pan outs of oven, keep going fast as you can. Done within 30 seconds or will mess up whole work
6. Be very very gentle whenever touch the cookies or enjoy endless delicious crumbs...

I did not pay attention to it's nick name until all done & enjoyed after mid-night: Labor of Love Cookie.
But kiddos and parents and hubby's extreme happiness on them made me almost willing to try an other bunch, soon.....
