Preserve the best of summer! Local farm produces true miracle berries.
2 lb best strawberry. Perfect if small and ripe. Hulled.
1.5 C Superfine sugar
1 lemon peel
1 stick best butter
Fold sugar into berries & peel. Stand in heavy pot @ room temperature for 4 hr.
Set on medium heat, bring to gentle boil, add butter, keep stir, 3-4 min.
Remove strawberry into jars.
Boil berry juice additional 8-10min to reduce & thicken.
Skim off foam. Discard lemon peel. Pour juice into jars.
Screw on lid while hot, refrigerate when cool.
1 lb makes about 1 jar.
Le Creuset soup pot & silicon spatula is a must for this job.
