Nothing can be faster nor easier than a bowl of rice noodle with varies toppings:
lunch for me. Home made pickles. No soup. Special home made soy sauce goes very handy.
For kiddos. No spicy, no pickles. In chicken soup.
Mid-night snack :) Very hot and spicy w/fry Tofu, sour bamboo shoots, tomato. Clear rice noodle works better this time for not that heavy on stomach than regular noodle, and faster than Guilin rice noodle...
