12/24/12 X'Mas Eve: Fresh Mozzarella Baked on Pastry, Seafood Chowder, Roasted Rib Eye Beef, Garlic Roasted Red Potato, Mixed Squash & Roots, Tiramisu


If not for decades, at least it's been years for us to stay in town for Christmas Eve. How relaxing & festive it could be to celebrate this night at home!
Since it's a small dining only for our own, I did not plan any particular ahead. And we only serve so limited people, cannot cook too much otherwise should end up too much left overs. This a simple & elegant dinner we enjoy for hours and keep toasting!

Menu:
Appetizer: Fresh Mozzarella Baked on Pastry
Soup: Seafood Chowder
Main: Garlic Roasted Rib Eye Beef
Sides: Roasted Red Potato, Mixed Squash & Roots
Dessert: Tiramisu

Fresh Mozzarella Baked on Pastry: Salt + Pepper. "This is it! We should never do pizza again!" Kiddos decided...

Seafood Chowder: Use Tuna & Seattle Giant Crab. Same way as New England Claim chowder. Very creamy (replace heavy cream w/whole milk though), warm & hearty!
 
 
 


Garlic Roasted Red Potato: We all like mashed potato, but too much cream, butter & gravy. This is healthier & simple. Olive oil, salt, pepper, garlic & parsley. I don't bake any bread at all. Hubby thought they are sausages when carried out the kitchen!

Roasted Rib Eye. It's only a 3.1lb pettie size. Glad turned out great! I was very concern about to calculate the minutes, but actually to check the temperature is way easy and accurate for the medium well I need.

Tiramisu, anyone?! Purchased a pack of 6 sky high priced eggs, turns out the york is just perfect fresh & eggy for the dessert! The color has never been this pal yellow before! They were all gone within 5 minutes after I took out of the fridge!
 
 



Topped with extra-dark chocolate instead of cocoa powder. Even better ----- senior sometimes get choked when breath in the powder.
